Rice pudding porridge with currants and pumpkin seeds

INGREDIENTS

1/2 cup of rice pudding (110g)
1 + 1/2 cup of water
1 lemon peel
1 cinnamon stick
1 cup of almond drink
2 tablespoons of honey

Toppings:
currants
pumpkin seeds
Cinnamon powder
1 drizzle of honey (optional)

PREPARATION

  1. In a pot mix the rice with the water, lemon and cinnamon stick. Let it cook for about 15 minutes over low heat.
  2. Add vegetable drink and honey. Let it cook for another 10 minutes. Remove the cinnamon stick and lemon peels.
  3. Transfer to a bowl. Serve with currants, pumpkin seeds and ground cinnamon.
