1 tablespoon ofolive oil
1 onion
3 cloves of garlic
5 tomatoes
1 chilli
2 tablespoons of tomato puree
3 cups of hot water
1 + 1/3 cup of carolino rice
Salt (to taste)
350g frozen seafood (prawns, clams and mussels)
Parsley (to serve)
PREPARATION
In a pan put the chopped onion and oil. Let it cool and then add the minced garlic cloves.
Add the diced tomatoes, chopped chilli and tomato paste to the pan. Let it cook for about 5 minutes.
Add hot water, rice and salt. Cover and let cook over low heat for about 12 minutes.
