Vegan Bowl with Ready Rice and Beans


1 tablespoon of olive oil
1/2 red pepper
1/2 yellow pepper
1 avocado
Juice of 1/2 lime
Salt and black pepper
70g sweet corn

2 packages of ready-made rice and beans
Coriander or parsley to taste


  1. Cut the peppers into thin strips and sauté them in a frying pan with a drizzle of olive oil.
    Season with a pinch of salt and let it cook for a few minutes.
  2. Heat the Ready Beans Rice in the microwave according to the instructions on the package.
  3.  Cut the avocado into slices and squeeze the lime (or lemon) juice. Season with a pinch of salt and black pepper.
  4. First place the bean rice in a bowl. Add the sautéed peppers, corn and avocado.
  5. Finish with chopped coriander (or parsley).
