Sweet Rice Porridge with coconut and passion fruit

INGREDIENTS

1/2 cup of sweet rice (110g)
1 cup of hot water (225g)
1 cup of coconut drink (or milk, 250g)
2 tablespoons maple syrup (or honey)
1 teaspoon vanilla flavoring
1 pinch of salt

Toppings:
2 tablespoons coconut chips
4 passion fruits
Raspberries to taste (optional)

PREPARATION

  1. In a saucepan, place the rice pudding, hot water, coconut drink (also hot), maple syrup, vanilla and salt.
  2. Let it cook on low heat for 20-25 minutes.
  3. Transfer to a bowl. Add the passion fruit pulp, coconut chips and raspberries
