Sweet Rice and banana smoothie

INGREDIENTS

1/2 cup of Rice Pudding (130g)
1 cup of water (210g)
1 cup of vegetable drink (or milk) (250g)
1 cinnamon stick
1 lemon peel
6 dates (pitted) (40g)
1 pinch of salt

2 + 1/2 cups of almond vegetable drink (or milk)
2 small bananas
1 teaspoon vanilla flavoring (optional)
Cinnamon to taste

PREPARATION

  1. In a pan, place the rice, water, vegetable drink, cinnamon stick, lemon peel, dates and salt. Let it cook over low heat for about 15 minutes or until the rice absorbs all the liquid. Remove the cinnamon stick and lemon peel. Leave to cool.
  2. Mix the rice pudding with the remaining vegetable drink, bananas and vanilla. Blend with a hand blender or in a blender.
  3. Leave in the fridge until serving. Serve with a sprinkle of cinnamon..
