Carolino duck rice

INGREDIENTS

1 duck breast
1/2 chorizo
2 bay leaves
1 onion
1 teaspoon olive oil
1 tablespoon of tomato pulp
3/4 cup of carolino rice
Salt (to taste)
Parsley (to taste)

PREPARATION

  1. In a saucepan place the duck, bay leaves and chorizo. Season with salt and cover with abundant water.
  2. Let it cook for about 45 minutes. Remove the duck and chorizo, but reserve the cooking water. Cut the chorizo ​​into cubes and chop the onion. Shred the duck.
  3. In a pan, sauté the onion with the oil. Then add the tomato and chorizo ​​pulp.
  4. Add rice, shredded duck, two cups of duck cooking water. Season again with another pinch of salt.
  5. Let it cook over low heat for about 18 minutes. Serve with parsley.
