1 cup of needle rice (already cooked) (200g)
1 cup of wheat flour (without yeast) (140g)
1 + 1/3 cup of water
1 pinch of salt
Filling
1 tablespoon of olive oil
5 cloves of garlic
300g brown mushrooms
180g spinach
4 tablespoons of walnuts
PREPARATION
In a frying pan, add the olive oil and chopped garlic cloves.
Cut the mushrooms into slices and add to the pan. Let it sauté for 2-3 minutes.
Add the spinach. Season with salt and black pepper.
Add the coarsely chopped walnuts and let them sauté for a few more minutes.
Reserve.
In a bowl, mix the cooked rice with the flour, water and salt. Grind everything very well with a hand blender or in a blender.
Heat a frying pan with a drizzle of olive oil. Use absorbent paper to spread the oil to remove excess.
Pour a ladle full of batter for the rice crepes into the frying pan. Let it cook for about 2 minutes and then flip the crepe using a spatula. Let it cook for another 1-2 minutes. Repeat this process until the dough is finished.
Stuff the rice crepes with the mushroom and spinach mixture.
