Pumpkin shape Carolino Rice balls

INGREDIENTS

1 tablespoon of olive oil
1 onion
1 large carrot
1 cup of Carolino rice
2 cups of vegetable broth
1 pinch of salt
1/2 teaspoon turmeric

1 sheet of nori seaweed (or black olives)
Celery (optional)
Mint leaves (optional)

PREPARATION

  1. Saute the chopped onion in olive oil.
  2. Add the grated carrot to the onion. Stir and let cook for 1-2 minutes.
  3. Add the carolino rice and then cover with the vegetable broth. Season with salt and turmeric.
  4. Cover and let cook over low heat for about 12 minutes. Let the rice cool for a few minutes. Place the rice in cling film and press until it forms a ball.
  5. On a sheet of nori seaweed, cut out the mouth shape and triangles for the pumpkins’ eyes. If you don’t have nori seaweed, you can use pieces of black olives to make the pumpkin faces. Press the seaweed into the rice balls and, if necessary, use a drop of water to help fix it.
  6. Finally decorate the pumpkins with a small piece of celery and mint leaves.
